NIFS anounced its publication of a cookbook All about Yellow Croaker Cooking and Nutrition using high-quality farmed yellow croaker. In the meantime, yellow croaker would be enjoyed only pan-grilled or stewed. To enable people easily enjoy the fish in various ways at home and in industries, NIFS developed 30 recipes for yellow croaker cooking. The recipes consist of three themes: simple meals, special meals, and meals for kids, spaning from traditional Korean dishes to contemporary fusion dishes. Representing wealth and abundance, Yellow croaker is a historically significant fish in Korean culture and is a staple item in important traditional ceremonies, particularly ancestral rites (charye) or served at the important guests’ table. The recent supply of yellow croaker, however, is facing difficulties due to declining catch amount caused by climate change. Under circumstances like this, NIFS has conducted research on the industrialization of land-based yellow croaker aquaculture for sustainable production and supply of yellow croaker, and secured the technique to produce high-quality yellow croaker in a sustainable manner. The Director General Mok, Jong-soo of the Ocean Climate and Environment Research Department said, “I expect the book to serve as a role in making known the great taste and nutritious value of yellow croaker to the people. In addition to that, the cookbook will also contribute to revitalizing aquaculture industries and seafood consumption.” Anyone can download the file of this publication for free from the official website (www.nifs.go.kr).
